Chia seeds are so beneficial for your health. When you eat them, they attach to all the bad stuff in your intestines and drag it out….and then….well, the gunk gets dragged out out. The thing is, chia seeds aren’t the tastiest things. Until now. Let’s get into it:
The Recipe:
- 1/3 cup chia seeds (black or white or a mixture)
- 1 cup coconut milk
- Toppings
- Dried raspberries
- Cacao nibs
- Toasted coconut (Dang brand unsweetened flakes have no additives)
- Flax seeds
- Bee pollen

Mix the chia seeds and coconut milk in a container/jar and leave in the fridge overnight (or at least 4 hours) to gelatinize and develop a pudding-like consistency.
When ready to eat, mix in a little more coconut milk if desired. Top with any toppings and enjoy!
Other topping ideas:
- Fresh or frozen fruit
- Cinnamon
- Honey (this isn’t whole 30 friendly but is delicious)
- Yogurt (not whole 30 friendly either)
- Cooked ube or sweet potato could be mixed in and would be beautiful
- Any supplemental powders (I use ashwagandha and maca root powders)
- Granola (not whole 30 friendly but would give a nice crunch)
- Pumpkin/sunflower seeds
- Nut butters
- Nuts
- Whatever you enjoy. It’s not bad on its own, just a little bland. But SO good for you.
