Even if you try not to eat too much pasta, it’s undeniable that pasta is incredible. It’s the perfect vehicle for any and all sauce, even if that sauce is just butter… Let’s get into it:
The Recipe:
- 2 cups flour (I use regular, unbleached AP flour and it’s just fine)
- 2 eggs
- 4T water
- 1T olive oil
- A pasta roller and cutter. A rolling pin won’t suffice if you want “noodles”, but if you don’t have one of those, see the pasta photo/video below!
- A food processor

Toss all ingredients in a food processor and pulse until just combined.
Knead the dough on a clean work surface until a nice ball comes together (should take 2-4 minutes).
Wrap the ball in plastic wrap and let sit on the counter or in the fridge for at least 20 minutes, up to overnight.
Section out this pasta dough into manageable pieces to roll out. Keep the remaining dough covered in plastic while not is use (but you don’t have to refrigerate it).
Use your pasta roller/cutter to create the noodles of your dreams.
Once you’ve rolled out and cut your pasta, flour it and lightly turn it into a cute nest until you’re prepared to boil it (see picture above for the “nests”).
Boil this fresh pasta for approximately 3 minutes and then drain and transfer to your hot sauce to finish cooking for another 2 minutes (it’s best practice to add 1/4 cup or 1/3 cup of pasta water to your sauce).

These little nuggets need to dry for 15-20 minutes before you boil them, and they will take about 6-7 minutes to boil properly before they get sauced. Make sure you test one before removing them. Here’s a video of me making them:
