Beef and broccoli

Just like mom used to make! Just kidding, she’s Polish. This is just like your favorite takeout. It takes 15 minutes and is so tasty. Let’s get into it:

The Recipe:

  • 1 pound ribeye, sliced extremely thinly against the grain*
  • 1/2 of a small yellow onion, thinly sliced
  • 3 scallions sliced on a bias (use the whole scallion)
  • 1T grated ginger
  • 1t grated garlic
  • 2-3 cups broccoli florets
  • 1t sesame oil
  • 2T soy sauce
  • 1/4t red pepper flakes
  • Black pepper

Over almost the highest heat available, heat up your wok (or a deep, nonstick pan). Get a couple teaspoons of olive/vegetable oil.

Get the onions in there and stir them around with the ginger, black pepper, and red pepper flakes. Add the broccoli and give that a stir. Let it cook for a minute or two, then move those veggies over to the side of the pan and add the steak. Let the steak sit untouched in the pan so it can get a little color.

This will literally cook for four minutes.

After two minutes of the steak cooking, add the garlic, scallions, and soy sauce, and then stir it around. Go ahead and stir this aggressively for the next two minutes.

Serve with your rice of choice** a good squirt of Sriracha, and/or cilantro if you’d like.

*If you have time before cooking, you can marinate the steak in soy sauce, black pepper, grated garlic, and grated ginger. I didn’t, and it was still delightful. If marinating, definitely use low-sodium soy sauce for the marinade and the sauce.

**I just learned that it actually is very important to rinse your rice before cooking it. I was being lazy before and then consequently curious as to why it was coming out gummy. Rinse your rice.
