Avocado grapefruit salad

I was introduced to this lettuce-less salad by my friend Laura and have never looked back. It’s the perfect mix of rich avocados, acidic grapefruit, salty Parmesan, crunchy sunflower seeds, spicy jalapeño, and bright cilantro. Let’s get into it:

The Recipe:

  • 2 ripe avocados, cubed
  • 1 grapefruit, segmented
  • 1/3 cup red onion or shallot, chopped
  • 1/4 cup cilantro, chopped (you can use the stems & leaves, or whatever you prefer)
  • Many shavings of Parmesan (please buy Parmesan in block form, it’s so much better than the pre-shredded stuff)
  • As much chopped or sliced jalapeño as you desire
  • The juice of 1 lime
  • 1/4 cup salted and roasted sunflower seeds or pepitas
  • A pinch of salt and lots of freshly cracked black pepper

Gently mix all ingredients.

Yep, that’s it.

Taste for seasoning and adjust accordingly. Enjoy!
