Brussel sprouts salad

It’s winter…and it’s easy to dive into a bowl of pasta or an entire pizza because that shit is comforting. But this salad hits the spot if you’re in the mood to feel good about what you eat after you eat it (and there is no judgement if you’re in the mood to eat an entire pizza while standing over the sink). Let’s get into it:

Brussel sprouts salad

The Recipe:

  • 3 cups shaved brussel sprouts
  • 1/2 or 3/4 cup shaved parmesan (please don’t get that pre-shredded stuff. Buy a block of Parmesan and use a vegetable peeler)
  • 1/3 cup chopped roasted almonds
  • 4 pieces chopped crispy bacon
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1t honey
  • 1t dijon
  • 2t fresh cracked black pepper
  • 1t salt

Shave the brussel sprouts (with a mandolin or a super sharp knife) and toss them with the parmesan, almonds, and bacon.

In a mason jar, combine the olive oil, vinegar, honey, dijon, salt and pepper, and shake it up vigorously. It should get thick and luxurious.

Dress the salad when you’re about to serve it.

Author’s note: You don’t have to tell anybody that you made the salad and you can eat the whole thing by yourself on the couch in sweatpants.
