Toffee squares

These are so good that when I make them I have to give them all away before I eat the entire pan. They have the delicious flavors of toffee, chocolate, and nuts. Let’s get into it:

The Recipe:

  • 1 cup butter
  • 1 cup brown sugar (light or dark, they’re both good)
  • 1t vanilla
  • 1 egg yolk
  • 1t salt
  • 2 cups flour
  • 1 bag of chocolate chips (whatever kind you like, or use chopped up chocolate bars)
  • 1 cup chopped nuts (I use walnuts, but can recommend peanuts, pepitas, sunflower seeds, and pecans)
  • Another sprinkling of salt
  • A 9×13 inch pan
  • A 350°F oven

Cream the butter and sugar until super fluffy. Add the vanilla, yolk, and salt and blend well. Mix in the flour and press the mixture into the pan (you can double the recipe if you want thick bars, but this amount is fine-I promise).

Bake for 15-17 minutes until the cookie is a deep golden brown.

Remove the pan from the oven and spread the chocolate chips on the top of the cookie. Allow them to sit for about 5 minutes to melt, and then spread the chocolate all over the top. Sprinkle on the extra salt and chopped nuts.

Let the cookie cool almost entirely. Before* the chocolate has completely set, cut these bad boys into bars and try not to eat the entire pan in one sitting.

*If you cut them after the chocolate has set, it will most likely just slide right off the top. You definitely want that chocolate on there.
