Brown butter frosting

There’s nothing more delicious than butter, right?

Wrong.

Brown butter is more delicious than anything on this entire world. And holy hell does it make the best frosting. Let’s get into it:

brown butter chocolate chip cookie cake

Here it is on the most delicious chocolate cake (recipe to come later) layered with chocolate chip cookie crumbs and so. much. love.

The Recipe (which makes enough frosting to make a 9in cake with three layers)

  • 6 sticks of butter (again, it makes a lot of frosting)
  • 8-10 cups of powdered sugar
  • 3T vanilla
  • 1/4 cup heavy cream
  • 1t salt
  • A hand or stand mixer

*************************************************************************************

Brown the butter: put all the butter into a pot or large pan and get that over medium heat. Stir it gently but constantly until it’s a deep, rich amber. Let it cool to room temp (it will separate and look weird but it’s fine, I promise).

Whip the butter up until fluffy and lovely, then add all the other ingredients and taste it. You will either fall in love or determine that it needs something else. It’s sweet. Really sweet. If that’s a problem, add some sour cream or cream cheese to balance it out.

Spread it thick on anything that you want.
