Flatbread

This basic flatbread recipe is so easy, is fantastic to grill, AND you can literally put anything on it and it will be great. The one pictured below has caramelized onions, figs, goat cheese, crispy pancetta, and a balsamic reduction. Let’s get into it:

Flatbread

The Recipe:

  • 2 cups flour (plus more for the work surface)
  • 1/2t active dry yeast
  • 1t salt
  • 1/2t pepper
  • 1/4t sugar
  • 1 cup warm water  (105-110°F)
  • Olive oil (for brushing onto flatbread)
  • A 450-500°F grill (or a 425°F oven)

Mix together all dry ingredients in a large bowl and pour in the water. Stir to combine.

Turn the dough onto a floured work surface and knead 7-10 minutes. If dough is too sticky, add flour as needed. Work into a ball and place into a clean bowl. Cover with a clean kitchen towel and allow to sit 10-15 minutes.

Roll the dough into desired shape. If baking, coat baking sheet in olive oil and place flatbread on top. Brush flatbread with olive oil and bake 18-20 minutes.

If grilling, brush flatbread with olive oil and grill 2-3 minutes per side, keeping the grill closed. Grill marks and bubbles will form. *If you grill too long, it will become a cracker. Also tasty, just not technically flatbread.*

When flatbread is cooked, you can top it with any combination of ingredients!

 

Some ideas:

  • Mozzarella, pesto, tomato, and fresh basil
  • Grilled peaches, prosciutto, ricotta, and crushed almonds
  • Tomato jam, sausage, and shaved parmesan
  • Bechamel, grilled eggplant, roasted red peppers, and mozzarella
  • Peanut sauce, julienned peppers, carrots, and cucumbers, shrimp, cilantro, and crushed peanuts
  • Hummus, shawarma, tzatziki, and roasted chickpeas
