These. Are. The. Bomb. These are so good that I had a friend say, “These are surprisingly spectacular,” and I had to agree. They’re also ridiculously easy to make. Let’s get into it:
You can use any kind of jam that you like! Pictured is strawberry rhubarb jam since I had a ton of rhubarb from a friend’s garden. I’d imagine any sort of berry, peach, or apricot would be fantastic, and so would peanut butter or chocolate hazelnut spread (of course).
The Recipe:
- 1 1/2 sticks butter
- 1 1/2 cup light brown sugar
- 1T vanilla
- 2 eggs
- 1 1/2 cup flour
- 1t baking powder
- 1t salt
- Your jam of choice (about 1/3 cup)
- White chocolate chips (about 1/2 cup, optional)
- A 350°F oven

These ingredients get mixed brownie-style:
In a pot, melt the butter and whisk in the sugar until dissolved.
Remove from heat and add vanilla and eggs. Whisk until well-incorporated.
Stir in flour, baking powder, and salt until just combined, then mix in white chocolate chips if using.
Spread the batter into a greased baking pan (easily fits a 10.25 x 15.25 x .75 inch pan) and use a knife or toothpick to swirl dots of jam around the top.
Bake for 25-30 minutes, or until a toothpick comes out clean and the top is a light golden brown. Let cool almost entirely before cutting. Makes a ton of bars and a boatload of people happy.
